Instructions

Preheat

Heat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

Dry Mix

Whisk the flour, Anthony's pea protein, PBfit powder, baking soda, cinnamon, and salt in a bowl.

Wet Mix

In a larger bowl, vigorously whisk the mashed bananas, Greek yogurt, banana applesauce, coconut sugar, liquid egg whites, and vanilla extract until fully combined.

Combine

Fold the dry ingredients into the wet mixture using a spatula just until the flour disappears.

Bake

Pour into the pan. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top is browning too quickly before the center is fully baked, loosely tent with foil for the remaining bake time.
